How do you do it? Easely, go to a traditional market near you during saturday or thurdays, since those are the day routinely fisherman or distributors put the best catch for sale.
Prefer seasonal fish, since in that case you'll pay less for fresh fish. In the end of the year using that technique you'll eat a variety of species.
Just naming some, you can get from flounders to mackerel, octupus to monkfish, cuttlefish to red mullet, never forgeting the shiny sardines.
On saturday, shop later, near 1 p.m., since the prices drop slightly.
Most of those fishes are captured by traditional or non industrial catching techniques.
Also, the fish seller are family to those who make the fisheries.
And at the end we support a traditional familly business far from large scale supermakets wo sell the industry boats captures.
